Through this, he has gained extensive experience working in fine dining and has a huge understanding of modern and classical French cookery. Mathew later went onto work for first class airlines, Etihad, where he was promoted quickly to ‘Senior Inflight Chef’. Matthew produces beautifully well balanced dishes for only the highest clientele on board, using the best produce which has been sourced globally. It’s a delight to have Matthew as part of the team.
